Amaseena is the Arabic restaurant at The Ritz-Carlton Dubai, JBR. The brief was to make it a destination in its own right rather than simply the hotel’s Arabic option.
I focused the kitchen on promoting Arabic cuisine properly, then built a calendar around it. Kabab Nights carried more than fifty varieties of kabab. Moroccan Nights ran as a complete experience, from the decor and the music through to the dishes themselves. Alongside the menu work I led the brigade day to day and trained the team to hold the standards the food was held to.
Those initiatives lifted sales by more than 200%. The restaurant was recognised within the Marriott group with awards for Best Arabic Restaurant and Best Restaurant Team.
